What does cold-pressed mean? The olive are crushed and squeezed without the addition of heat. Added heat would yield more oil - but it wouldn't be as good.

The man pictured here is the great-grandfather of the younger generation running things now. I sometimes marvel at what was needed back in his day - and indeed back in Homer's day - to do all this without electricity or hydraulics.
