Lassi, a milk-based, creamy, yoghurty, slightly spicy, concoction, could very well be the national drink of India - after chai, of course. The man behind Joanna is a lassiwallah. (Have you cottoned to the fact that the -wallah suffix denotes someone who does, makes or sells something?)

I've never been a big fan of this kind of stuff but I have to say, this lassi, fresh-made from a large vat, served in terracotta cups is a taste sensation.

When you finish your drink, you throw the cup into a nearby bin where monkeys are waiting to break them apart and polish off what you've left behind. It's all very eco-friendly - as are most things in India. Soups are often served in leaves that have been shaped into bowls. Just toss it on the ground when you're finished (as everyone here does) and you're sure to make at least one cow happy - and then she'll go on to make the raw material for more lassi. Everyone's a winner.
