Carpincho (or Capybara)

This gentle creature has the dubious distinction of being the world's largest rodent -- he can weigh up to 75 kg. Thousands of them inhabit the swamplands and floating islands of the Reserva.

They're good swimmers. They eat sea grasses. One male can have up to six "wives". They are prized for both their meat and their hide.

One night, before coming to the Reserva, JoJo and I ordered a mixed plate of local specialties. There was one dish that was delicious but didn't look or taste familiar. We asked the waiter about it. "It's Carpincho." he replied.
